A Private Chef during your stay on St Barts will allow you to enjoy a Gastronomic meal provided by the best quality Chefs in Europe and the Caribbean, with the best choice of wine on St Barthelemy.

The choices and the quality are extraordinary for a meal prepared by a private chef in your villa, whether for an intimate dinner for two, a birthday or anniversary celebration, or simply to spoil yourself.

We have been working with the private chefs on St Barts for years, and we know who specializes in what. We also go through the process of who is available for you, negotiating budgets and getting the chef, his equipment and staff to and from your place of stay.

Sample menus are always just that, samples, and you can request any change, make any suggestion or add anything you wish within reason.

Because of the equipment generally available in St Barts Villa kitchens, the convention is that everyone eats the same main courses, and variations in sides and desserts are kept to a minimum.

You can eat A La Carte if you wish, however this will be more costly and require more staff and equipment. If this is what you want, just ask for it.

Table D'Hôte is a good compromise, wherein the group will have a limited range of appetizers, main courses* and desserts; this adds variety, however keeps the logistics to a minimum.

Wines and beverages are usually quoted separately, and you can provide your own if you wish. However we have found it is always worthwhile following the chef's suggestions on wines, always.

Seared Local Kingfish served on local diced sweet potato with local West Indian Spices and a saffron butter

Scallop and Mahi Mahi Skewers covered with crispy coriander and lime served with a celeri and champagne butter emulsion

Crème Brulée

Menu 2:

Roasted vegetable salad with parmesan cups, a chive dressing

Braised Rack of Lamb with a fine herb crust, a garlic and rosemary jus

Assortment of Fresh Fruit and Sorbet

Menu 3:

Salmon Mi-cuit and an Artichoke Concassée, a saffron butter sauce

Salmon Filet Pavé roasted with fleur de thyme, an asparagus cream and petits vegetables

Individual lemon tart

Menu 4:

Avocado, Tomato and Crab "Confident", on arugula with parmigiana cheese

Veal Polpetto with basil and taleggio

Chocolate Molten Cake, Vanilla Ice Cream

Menu 5 : 

Duck Breast Carpaccio with truffle and parmigiana cheese on a bed of Arugula seasoned with chives and fresh herbs

Rack of Veal, Almond and Marsala sauce, Potato gratin and Green Vegetables

Homemade Tiramisu and Strawberries

Menu 6:  

Local Mahi Mahi and Mango Tartare

1/2 Local Lobster grilled with crispy fine herb crust and 2 sauces

Shrimp Risotto and Mini Ratatouille Accompagnement

Roasted Pineapple, star anise aroma, rum raisin ice cream
