St Barts Private Chefs

We can recommend and organize a private chef for your vacation villa, plus the delivery of any specific ingredients or equipment. We have a great working relationship with amazing chefs from Europe and the Caribbean and can provide menus with French, Creole, Asian and fusion cuisine.

Because of the equipment generally available in St Barts Villa kitchens, the convention is that everyone eats the same main courses, and variations in sides and desserts are kept to a minimum. You can eat A La Carte if you wish, however this will be more costly and require more staff and equipment. If this is what you want, just ask for it. Table D'Hôte is a good compromise. The group will have a limited range of appetizers, main courses and desserts; adding variety, and keeping logistics to a minimum.

Wines and beverages are usually quoted separately, and you can provide your own if you wish. However we have found it is always worthwhile following the chef's suggestions on wines.

Seared Local Kingfish served on local diced sweet potato with local West Indian Spices and a saffron butter

Scallop and Mahi Mahi Skewers covered with crispy coriander and lime served with a celeri and champagne butter emulsion

Roasted vegetable salad with parmesan cups, a chive dressing

Braised Rack of Lamb with a fine herb crust, a garlic and rosemary jus

Salmon Mi-cuit and an Artichoke Concassée, a saffron butter sauce

Salmon Filet Pavé roasted with fleur de thyme, an asparagus cream and petits vegetables

Avocado, Tomato and Crab "Confident", on arugula with parmigiana cheese

Veal Polpetto with basil and taleggio

Chocolate Molten Cake, Vanilla Ice Cream

Duck Breast Carpaccio with truffle and parmigiana cheese on a bed of Arugula seasoned with chives and fresh herbs
